Today's recipe is an easy snack that comes together quickly. Kraken has tried to eat this dish every time I’ve made it, so I think it has his approval!.
For one serving, you'll need:
- 1 sweet potato, peeled and cut into large cubes
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Garlic powder
- 1 egg
- Half a teaspoon of butter
- 1–2 tablespoons of kimchi
- 1 green onion, chopped
- Sesame seeds (optional)
- 1 avocado (optional)
Steps
- Preheat the oven to 420°F. Peel and cube the sweet potato.
- Spread the sweet potato on a baking sheet, drizzle with olive oil, then season with salt, pepper, and garlic powder.
- Bake for 25–35 minutes until the edges are brown, then remove from the oven.
- Melt the butter in a frying pan on medium heat. Cook the egg sunny side up until the whites are just set — the yolk should still be runny.
- Put the sweet potato in a bowl and top with the egg, green onion, sesame seeds, avocado, and kimchi.
- Mix it all together and enjoy. The sweet, the spicy, and the runny yolk are very happy together.
